Ramzan Special: Khade Masale Ka Chicken

Khade masale ka chicken basically means chicken prepared with the whole spices. We usually prepare all our Indian recipes with growund or powdered spices. But in this chicken recipe all the spices are used in their whole form. This gives a delectable aroma to the chicken dish and makes it difficult for you to resist.

Serves: 4
Preparation time: 3 hours
Cooking time: 30 minutes

Ingredients

  • Chicken- 1kg (cut into medium sized pieces)
  • Yogurt- 1/2 cup
  • Salt- as per taste
  • Turmeric powder- 1/2 tsp
  • Mustard oil- 4tbsp
  • Onions- 4 (thinly sliced)
  • Bay leaf- 1
  • Water- 1/2 cup
  • Coriander leaves- 2tbsp (chopped)

Khada Masala

  • Cumin seeds- 1/2 tsp
  • Coriander seeds- 1tsp
  • Black peppercorns- 1/2 tsp
  • Cloves- 3
  • Black cardamom- 1
  • Cinnamon piece- 1
  • Mace- 1 small twig
  • Dry red chillies- 4
  • Garlic- 4 cloves (finely chopped)
  • Ginger- 1 medium piece (grated)
  • Turmeric powder- 1/2 tsp
  • Kashmiri red chilli powder- a pinch (for colour)

Procedure
1. Soak all the ingredients of khada masala in half a cup of warm water for 30 minutes.
2. Wash the chicken pieces properly with water.
3. Marinate the chicken with yogurt, turmeric powder and salt. Refrigerate for 2-3 hours.
4. After that, heat the mustard oil in a pan and bring it to the smoking point and then reduce the heat.
5. Add the bay leaf and onions to it. Fry for 5-6 minutes on medium heat.
6. Now add the marinated chicken pieces to the pan and stir fry on low heat for 8-10 minutes. Do not add the yogurt marinade for now.
7. Raise the heat to medium and the add the soaked spices with water to the pan. Mix well and add salt.
8. Cover the pan with a lid and let it simmer for 20 minutes on low flame.
9. After that check if the chicken is cooked properly.
10. Now add water and simmer for another 10 minutes.
11. Once done, switch off the flame and garnish with chopped coriander leaves.
12. Cover and keep for at least half an hour before serving.
