Lemon Cumin Roasted Chicken Recipe

Chicken is one of the most popular non-vegetarian dish for meat lovers. You can have it as a snack or prepare as a side dish in a meal. Whatever be the recipe, the taste and flavour of the delicious and juicy chicken can tempt any meat lover. Potatoes on the other hand is the most common vegetable that is used for preparing gravies (sabjis).

So, we thought of giving you a main course recipe that has both chicken and potatoes. Here is a simple recipe to prepare lemon cumin roasted chicken. The baked chicken is flavoured with cumin, lemon and served with potatoes. Check out the recipe.

Lemon Cumin Roasted Chicken Recipe

Serves: 3-4
Preparation time: 15 minutes
Marination time: 1 hour
Cooking/baking time: 1 hour 20 minutes

Ingredients

  • Roasted chicken- 6 pounds
  • Potatoes- 2 (peeled and cut into thick slices)
  • Cumin seeds powder- 2tsp
  • Garlic powder- 1tsp
  • Onion powder- 1tsp
  • Salt- as per taste
  • Red chilli flakes- 1tsp
  • Paprika- 1tsp
  • Black pepper powder- ½ tsp
  • Olive oil- 2tbsp

Procedure

  • Cut the chicken with the backbone using a sharp knife. Now, slowly remove the backbone from the breasts.
  • Grease the chicken with 1tbsp olive oil. In a bowl, mix cumin seeds powder, red chilli flakes, salt, onion powder, garlic powder and paprika. Apply overall on the greased chicken. Sprinkle lemon juice and let the chicken pieces marinate for an hour (you can also keep in the refrigerator for marination).
  • Heat the oven to 345 degrees. After marination, bake the chicken for an hour. Turn to cook the pieces evenly.
  • Meanwhile, grease the potato slices with olive oil and salt. Now arrange them in the baking dish near the chicken (after the chicken is baked for 45-50 minutes). Bake till the edges become brown and the potatoes look tender.

Take the chicken out once done. Cut into medium size pieces. Garnish the plate with baked potatoes, cheese dip and then serve.
