Kerala Style Pepper Chicken Fry Recipe
If you have the privilege to visit the God's own country, Kerala; do not forget to try out the cuisine. Kerala cuisine serves you with some of the most lip-smacking dishes that you have ever tasted. The mix of fresh coastal spices make the dishes of Kerala burst with robust flavours.
On a recent visit to Thalassery in Kerala, I had the privilege of tasting the delicious and spicy pepper chicken fry. The dish tasted amazing and the freshly ground pepper added a magical aroma to the chicken recipe. Kerala is a foodie's haven and especially if you are a non vegetarian foodie. This Kerala style pepper chicken fry recipe is sure to enthrall your taste-buds and leave you wanting more.

Ingredients
- Chicken - 500 gms (cut into medium size pieces)
For Marination
- Pepper powder - ¼ tsp
- Lemon juice- 1tsp
- Salt- as per taste
For Masala
- Onion - 2 (sliced)
- Ginger & garlic - 21/2 tsp each, (grated/crushed)
- Green chilli - 1-2 (slit lengthwise)
- Whole black pepper- 1¼ tsp
- Garam masala- ½ tsp
- Fennel (saunf) powder- ¼ tsp
- Turmeric powder- ¼ tsp
- Soya sauce- 1tsp
- Tomato sauce - 1tsp
- Curry leaves- 1 sprig
- Oil- 3tbsp
- Salt- as per taste
Procedure
- Marinate the chicken pieces with salt, pepper powder & lemon juice.
- Crush the whole black pepper (do not powder).
- Heat oil in a pan & add sliced onion. Fry it till it turns brown.
- Add grated/crushed ginger and garlic, green chilli and curry leaves. Let it cook till the raw smell goes, around 3-4 mins.
- Add crushed pepper, turmeric powder, garam masala, fennel powder. Mix well. Cook for another 2-3 mins.
- Add soya and tomato sauce/ketchup. Mix well.
- Add ¼ cup water and salt and mix well.
- Now add marinated chicken pieces. Combine everything well and make sure that chicken pieces are coated with masala.
- When chicken starts changing the color add ½ cup water & mix well. Allow it to boil.
- Reduce flame and cover and cook it till the chicken is done. Check frequently, give a stir and add more water only if required.
- Once the chicken is done, remove the lid, add some curry leaves and continue cooking for another 5-7 mins on low flame, just to roast it a little more.
- Switch off the flame once its completely done. The dish will get a darker shade once it rests.
Kerala style pepper chicken is ready to be served. You may serve it as a starter or as a side dish with rotis.
