Our first reaction to potato is 'unhealthy'. True potatoes have starch and extra carbohydrates but you can eat them in a healthy way too! Chicken potato salad is on of the best chicken salad recipes because it does exactly that.

Since potatoes are already rich in calories there is no need to add on fats by using oil or deep frying them. This simple potato salad recipe uses boiled potatoes. Firstly, boiling drains away some of the starch and secondly it is a healthier option as it has no oil. This can rightfully be called one of the best chicken salad recipes because it gives you a perfect combination of proteins and carbohydrates. Chicken potato salad is a quick snack recipe because you can make it in minutes. There is no usage of unusual ingredients that can be problematic.

Ingredients For Chicken Potato Salad:

1. Chicken boneless 250 grams (small pieces)
2. Potatoes 3 (sliced into round pieces)
3. Iceberg Lettuce 4 leaves
4. Onion rings 10
5. Tomatoes 1 (sliced in round pieces)
6. Ground pepper 1 teaspoon
7. Thyme 1 teaspoon
8. Coriander leaves (finely chopped)
9. Fresh ginger crush 1 teaspoon
10. Vinegar 1 teaspoon
11. Fresh Cream 1 tablespoon
12. Salt as per taste
13. Olive oil 1 teaspoon
14. Salad dressing (optional)

Procedure For Chicken Potato Salad

  • Boil the chicken and potatoes together so that the potatoes absorb the flavor of the chicken stock.
  • Now take the chicken and potato slices in a bowl; add the tomato, onion rings and freshly grated ginger.
  • Mix well and season with ground pepper, dry thyme and salt.
  • Pour vinegar and fresh cream and stir it to mix.
  • Add olive and salad dressing it you want to. This salad has its own flavor so even if you don't add salad dressing it will be a great meal.
  • Garnish with coriander leaves and ice berg lettuce or cabbage leaves if they are not available.
