Chicken Cashews: Chinese Recipe

Chicken Cashews: Chinese Recipe

Serves: 3
Preparation time: 10 minutes
Cooking time: 30-45 minutes

Ingredients

  • Chicken pieces- 250 gms (boneless)
  • Dry sherry- 1tbsp
  • Cornstarch- 1tbsp
  • Ginger juice- 1tsp
  • Hoisin sauce- 1tsp
  • Soy sauce- 1tbsp
  • Granulated sugar- ½ tsp
  • Green onion- 1 (chopped)
  • Garlic- 3-4 pods (minced)
  • Cashews- ½ cup
  • Capsicum- 1 (cut into medium sized pieces)
  • Water- 2tbsp
  • Salt- as per taste
  • Oil- 2tbsp

Procedure

  • In a bowl, mix chicken pieces with dry sherry, ginger juice, salt and then add cornstarch at the end. Mix well with chopsticks and marinate the chicken pieces for 25 minutes.
  • In another bowl, mix hoisin sauce, soy sauce, water and granulated sugar together. Keep the sauce aside.
  • Meanwhile roast the cashews using little oil for about 5 minutes till they turn brown. Remove and keep aside.
  • Heat 1tsp oil in a wok and when it turns hot, saute the green onions and capsicum for about 5 minutes. Keep in a plate.
  • Now heat 2tbsp oil in the same wok and then saute garlic for a few seconds on a low flame. Add the chicken pieces and then mix well. Cook for about 5 minutes till the chicken pieces change their colour.
  • In the same wok, add the sauce, chicken pieces and mix all the ingredients well. Cook for about 4 minutes more.

Garnish the chicken with roasted cashews. Serve the chicken cashews hot with steamed rice.
