Chicken In Brandy Sauce: Sunday Special

Its Sunday morning and you had promised your family something special this weekend. But you are just too tired to try anything complicated. What you need is a sweet and easy chicken recipe. This is the perfect situation to to try the casserole called chicken in brandy sauce. Obviously, the name is exotic and so is the dish. But surprisingly, chicken in brandy sauce is actually one of the very easy chicken recipes in any cook book.

It is nothing like the usual chicken and mushroom recipes. That is why chicken in brandy sauce is the ideal Sunday's lunch recipe. Apart from being a laughably easy chicken recipe, this dish also cooks every quickly. You can prepare chicken in brandy sauce in just about 40 to 45 minutes and the effort involved is minimal.

Brandy Chicken

This recipe makes use of mushrooms and chicken primarily. But you can add broccoli, spinach and other vegetables like bell peppers if you want to. Chicken in brandy sauce is usually served with a side dish of potatoes or bread.

Ingredients

  • Butter- 3tbsp
  • Onion- 1 (sliced thinly)
  • Chicken breasts- 4 (400 grams)
  • Parsley or coriander leaves- 4 sprigs (chopped)
  • Pepper- 1tbsp
  • Brandy- 1 cup (100 ml)
  • Chicken stock- 1 cup (100 ml)
  • Mushrooms- 10 (cut into halves)
  • Broccoli- 50 grams (chopped into florets)
  • Salt- as per taste

Procedure

1. Melt butter in a deep bottomed pan. When it is sufficiently warm, add the chicken pieces and onions to the pan.

2. Cook for 5 minutes on medium flame. Keep turning around the chicken pieces so that all the sides are evenly browned.

3. Add pepper and salt to the pan and stir well to mix it up.

4. Now add half the parsley and brandy to the pan. Cover and cook for 20 minutes on low flame.

5. Remove the cover; add chicken broth, broccoli and mushrooms to the pan.

6. Cover and cook for another 10 minutes on low flame.

Garnish with remaining parlsey and serve with mashed potatoes on the side.
