Andhra Style Red Chicken Masala

So, today we have a simple, spicy and a mouthwatering chicken recipe for you from the spice state of Andhra Pradesh.
This Andhra style red chicken masala is prepared in a rich, spicy and creamy red gravy. The blend of spices make this chicken recipe an absolute delight. It a great accompaniment with naans and rotis. If you are planning for a party this weekend, then this Andhra style red chicken masala is a must have on your menu.

So, here is the recipe of Andhra style red chicken masala. Do give it a try.
Ingredients
- Chicken- 1 whole (cut into curry pieces)
- Garlic and ginger paste- 1tbsp
- Salt (seasoned to taste)
- Turmeric powder- ½ tsp
- Red chilly powder- 1tsp
- Red food coloring (optional)
- Green chillies- 2-4
- Fresh coriander- 1 sprig
- Fresh mint- 1 sprig
- Onion- 1 (finely sliced)
- Raw sugar- ½ tsp
- Tomatoes- 2-4 (diced)
- Garam masala- ¼ tsp
- Cooking oil- 2tbsp
- Cashews- 1 handful (ground to fine paste)(optional)
- Creamy yogurt- 1tbsp
- Corn flour- 1tsp
Method
- Sauté onions in a dry non-stick fry pan on high with raw sugar in cooking oil until caramelized.
- Add garlic & ginger paste and sauté for a minute. Add chilly powder, turmeric powder, salt, cashew powder, yogurt & garam masala and stir.
- Add diced tomatoes and stir.
- Add the chicken and green chillies with one last stir and cover the pan with lid.
- Cook until the chicken is tender for about 10-15 minutes.
- Add the herbs (coriander and mint) at the last few minutes.
- Serve with basmati rice, roti or naan.
