Ingredients For Turkey Stuffing:

1. Boneless chicken-300 grams (cut into small pieces)
2. Onions (baby onions)-4 (chopped)
3. Garlic-4-5 cloves (minced)
4. Spring onions-4 (bulbs and greens chopped separately)
5. Sweet corn-1 can
6. Celery or coriander leaves-' bunch
7. Red bell pepper-1 (chopped)
8. Yellow bell pepper-1 (chopped)
9. Green bell pepper or capsicum-1 (chopped)
10. Sweet potatoes-5-6 (boiled and peeled)
11. Cumin seeds-1 teaspoon
12. Vinegar-1 tablespoon
13. White pepper-1 tablespoon (use black pepper if you can't find it)
14. Oregano-1 teaspoon
15. Olive oil-2 tablespoons
16. Salt as per taste

Procedure:

  • Half boil the chicken with one baby onion, pepper and some celery stalks for flavour. Drain out the chicken and store the chicken stock. Keep it for reducing in a pan on minimum flame (about 7-8 minutes). Reducing concentrates the taste of the stock.
  • Heat oil in a shallow pan; add cumin seeds and pepper to it for flavour. Then add the onions and saute them till they are golden brown. The garlic and the spring onions go next; cook them for 2 minutes on low flame.
