Macaroni is a favourite among kids. When brought together as a salad it can become a favourite to the entire family. This healthy recipe can be whipped up in minutes and is perfect for a picnic salad. Its a great lunch that can be packed for kids too!

Easy Macaroni Salad Recipe -

Ingredients for macaroni salad:

Dry macaroni pasta – 2 cups
Egg – 1 hard boiled and chopped
Capsicum (Red / yellow / green) – 1, roasted and chopped into thin strips
Onion (Sping or regular) – 1, chopped finely
Coriander – finely chopped
Lemon juice - ' tsp (u can substitute with vineagar)
Mayonnaise - ' cup (or more if you like)
Chilli powder / oregano – 1 tsp
Ground black pepper – as per taste
Salt to taste

Method to prepare macaroni salad:

Cook macaroni in salted water. Remove it from the stove, just when it's well done, but not too soft.
Drain the macaroni and rinse it immediately with cool water.
Take a big bowl and add the chopped onion. Sprinkle it with lemon juice or vinegar.
Add the macaroni, which is now cool, to the onions.
Mix the rest of the ingredients, along with the mayonnaise.
Check the seasoning and serve it.

Tasty macaroni salad is ready to savour.
